For the dough balls…

  • 150ml warm water
  • 1 teaspoon of sugar
  • 15 grams fresh yeast
  • 225 grams of plain flour
  • 1.5 tablespoon of salt

Pizza Express say that prep time will be around one hour and cooking time will be six minutes.

First, you’ll need to pre-heat the oven to 230 degrees. Then, add the sugar and crumble the fresh yeast into warm water. Allow the mixture to stand for 10-15 minutes in a warm place until froth develops on the surface.

Next, sift the flour and salt into a mixing bowl. Make a well in the middle and pour in the yeast mixture.

Lightly flour your hands and slowly mix all together until they bind. Generously dust the surface with flour and, next, throw down dough and begin kneading for ten minutes until it’s smooth, silky and soft.

Leave to rest until soft to the touch but not too springy. Then, it’s ready to roll.

Roll dough into one long 1.2 metre tube and chop into 16 chunks and place in an ovenproof pan. Leave the dough balls to rest in the pan for 30 minutes.
